Tender Steak Bites in Garlic Butter with Creamy Parmesan Sauce

Tender Steak Bites in Garlic Butter with Creamy Parmesan Sauce

These tender steak bites are a rich, comforting main course that combines beautifully browned pieces of sirloin steak with fragrant garlic butter and a smooth, creamy Parmesan sauce. The steak is quickly seared in butter to develop a flavorful browned exterior while keeping the inside tender and juicy. The same skillet is then used to build the sauce, allowing the flavorful browned bits left behind by the steak to become part of the finished dish.

The combination of garlic, butter, beef broth, heavy cream, and Parmesan creates a savory sauce that is creamy without overpowering the natural flavor of the steak. Fresh parsley adds a simple finishing touch and a little freshness to balance the richness of the sauce.

Recipe Details

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Ingredients

  • 1 lb (450g) sirloin steak, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbsp (28g) butter
  • 5 cloves garlic, minced
  • 1/2 cup (120ml) beef broth
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

1. Season the Steak

Start by preparing the sirloin steak. Cut it into small, bite-sized pieces so that each portion can be quickly seared and easily coated with the sauce.

Place the steak pieces in a bowl and season them with salt and pepper to taste. Toss the pieces gently so the seasoning is distributed evenly over the steak. Make sure the pieces are separated enough to season their surfaces properly.

2. Cook the Steak Bites

Place a large skillet over medium-high heat and add the butter. Allow the butter to melt completely and become hot before adding the steak.

Once the skillet is ready, add the seasoned steak bites. Arrange them in the pan so they can brown properly rather than becoming crowded together. Cook the steak for approximately 3–4 minutes, allowing the pieces to develop a nicely browned exterior.

Turn the steak pieces as needed so they brown on their other sides as well. Continue cooking until the steak reaches your desired level of doneness. The goal is to develop a flavorful browned surface while keeping the steak bites tender.

Once cooked, remove the steak bites from the skillet and set them aside. Do not clean the skillet, because the browned bits remaining on the bottom will add flavor to the sauce.

3. Make the Garlic Butter Sauce

With the same skillet still over the heat, add the minced garlic. Sauté the garlic for approximately 30 seconds, stirring as it cooks, until it becomes fragrant.

Be careful not to let the garlic burn. It should become aromatic without turning dark, as burnt garlic can introduce a bitter flavor to the finished sauce.

Pour the beef broth into the skillet. As you add it, use a wooden spoon or spatula to gently scrape the bottom of the pan. This releases the browned pieces left behind by the steak and incorporates their flavor into the broth.

Allow the broth to simmer briefly so that the flavors begin to come together.

4. Add the Cream and Parmesan

Pour the heavy cream into the skillet and stir it together with the garlic and beef broth. Continue stirring gently as the mixture comes together.

Add the grated Parmesan cheese and stir thoroughly. Allow the sauce to simmer for approximately 3–4 minutes, stirring frequently. During this time, the Parmesan will melt into the cream and the mixture will gradually become thicker, smoother, and more luxurious.

Continue cooking until the sauce reaches a creamy consistency that can coat the steak bites. Stir regularly to keep the sauce smooth and prevent the cheese from sticking to the bottom of the skillet.

5. Return the Steak to the Sauce

Once the Parmesan cream sauce has thickened, return the cooked steak bites to the skillet.

Stir and toss the steak gently so that every piece becomes coated with the creamy Parmesan sauce. Let the steak bites heat through in the sauce for another minute or two. This final step allows the flavors of the steak, garlic, butter, beef broth, cream, and Parmesan to come together.

Avoid cooking the steak for longer than necessary at this stage so the pieces remain tender.

6. Garnish and Serve

Remove the skillet from the heat once the steak bites are fully coated and heated through.

Finish the dish with freshly chopped parsley, scattering it over the steak bites and creamy Parmesan sauce. The fresh parsley provides a light, fresh contrast to the rich sauce.

Serve the steak bites immediately while the sauce is warm and creamy. They can be served over pasta or enjoyed with crusty bread to soak up the flavorful Parmesan sauce.
