Classic Chicken Piccata with Zesty Lemon Caper Sauce

Classic Chicken Piccata with Zesty Lemon Caper Sauce

This Classic Chicken Piccata is a bright, flavorful dish built around tender chicken cutlets, a golden coating, and a fresh lemon-caper sauce. The combination of savory chicken, fragrant garlic, tangy lemon juice, briny capers, and butter creates a balanced sauce that is rich without being overly heavy.

The chicken is first prepared into thin, evenly cooked cutlets and coated with flour, egg, and Parmesan. It is then pan-seared in olive oil until beautifully golden on the outside and cooked through. The same skillet is used to create the sauce, allowing the garlic and browned bits left behind by the chicken to add extra depth. Chicken broth and lemon juice form the bright base, while capers and butter give the sauce its characteristic savory, tangy finish.

Ingredients

For the Golden Chicken Cutlets

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese

For the Zesty Caper Sauce

  • 1/2 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp capers, drained
  • 1 tbsp unsalted butter

For Cooking and Finishing

  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped, for garnish
  • Salt and pepper to taste

Preparation

Before beginning, prepare all of the ingredients so that everything is ready when needed. Chicken Piccata moves quickly once the cooking starts, so having the flour, eggs, Parmesan, garlic, broth, lemon juice, capers, butter, and parsley prepared in advance makes the process smoother.

Instructions

1. Prepare and Season the Chicken

Place the boneless, skinless chicken breasts on a cutting board and pound them until they are approximately 1/2-inch thick. The goal is to create pieces that are relatively even in thickness so they cook consistently in the skillet.

Season both sides of the chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Make sure the seasoning is distributed evenly across the chicken.

2. Prepare the Coating Station

Set up three shallow dishes. Place the 1/2 cup all-purpose flour in the first dish. In the second dish, whisk the 2 large eggs until they are well combined. Place the 1/4 cup grated Parmesan cheese in the third dish.

This three-step coating creates the golden exterior of the chicken. Having the dishes arranged in order will make coating each cutlet much easier.

3. Coat the Chicken

Take each seasoned chicken cutlet and dip it into the flour first. Turn it so both sides are lightly covered, then gently shake off any excess flour.

Next, dip the floured chicken into the whisked eggs, making sure the egg coats the entire surface. Allow any excess egg to drip back into the dish.

Finally, transfer the chicken into the grated Parmesan cheese. Press gently so the Parmesan adheres to both sides and creates an even coating. Repeat with the remaining chicken cutlets.

4. Sear the Chicken

Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the coated chicken into the skillet. Avoid overcrowding the pan; cook the chicken in batches if necessary.

Cook each piece for approximately 3–4 minutes on the first side, then turn it over and cook for another 3–4 minutes. The chicken should develop a golden-brown exterior and be cooked through.

Once cooked, transfer the chicken to a plate and set it aside while preparing the sauce.

5. Build the Lemon-Caper Sauce

Keep the same skillet over the heat. Add the 2 cloves of minced garlic and sauté for about 30 seconds. Stir gently so the garlic becomes fragrant without burning.

Pour in the 1/2 cup low-sodium chicken broth and 1/4 cup fresh lemon juice. As the liquid enters the skillet, stir and scrape the bottom of the pan to loosen the flavorful browned bits left from the chicken.

Add the 2 tablespoons of drained capers and 1 tablespoon of unsalted butter. Stir the ingredients together and allow the sauce to simmer for approximately 2 minutes. During this time, the flavors combine and the sauce reduces slightly, becoming more concentrated and flavorful.

6. Return the Chicken to the Sauce

Place the cooked chicken cutlets back into the skillet. Turn each piece carefully so it becomes coated with the lemon-caper sauce.

Taste the sauce and season with additional salt and pepper as needed. Allow the chicken to warm through in the sauce so it absorbs some of the bright lemon and savory caper flavors.

7. Garnish and Serve

Finish the dish with 1/4 cup of freshly chopped parsley, scattering it generously over the chicken and sauce. Serve the Chicken Piccata immediately while the chicken is warm and the sauce is fresh.

The finished dish should have tender, golden chicken covered in a glossy, zesty sauce with noticeable lemon brightness, savory garlic, and the distinctive briny flavor of capers.
