Shrimp Dirty Rice 3

Shrimp Dirty Rice is a hearty, flavor-packed Southern-style dish that brings together tender shrimp, richly browned meat, and a deeply seasoned, savory sauce that soaks into fluffy cooked rice. The “dirty” look comes from the browned meat, spices, and thickened broth coating every grain, turning plain rice into something bold and satisfying. This recipe builds flavor in layers: you quickly sear the shrimp so they stay juicy, then brown the meats with onions, bell peppers, and garlic until everything is aromatic and well developed. A blend of dried herbs and spices is stirred in, flour is used to thicken, and broth is added gradually to create a smooth, spoon-coating mixture. Finally, the cooked rice goes in to absorb the seasoned sauce, and the shrimp returns at the end just long enough to heat through without overcooking. It’s filling, warming, and perfect for an easy dinner that still tastes like it took all day.

Ingredients

  • 1 lb hamburger meat
  • 1 lb ground beef sausage
  • 10–12 shrimp (tail off and deveined)
  • 4 cups cooked rice
  • 2 cups broth (use Better Than Bouillon chicken)
  • 1.5 cups mixed onions and bell peppers, chopped
  • 3 tbsp vegetable oil, divided
  • 1 tsp seafood seasoning
  • 1/4 cup flour
  • 1 tbsp oregano
  • 3 tsp minced garlic
  • 1 tsp thyme
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp pepper (more to taste)
  • 1/2 tsp salt (more to taste)
  • Pinch of cayenne pepper

Instructions

Step 1: Season the shrimp

Place the cleaned, deveined shrimp (with tails removed) into a bowl. Sprinkle the seafood seasoning over the shrimp and toss thoroughly so each piece is evenly coated. This quick seasoning step helps the shrimp stand out in a dish that has a lot of bold flavors from the meats and spices.

Step 2: Sear the shrimp and set aside

Heat 2 tablespoons of the vegetable oil in a skillet over medium-high heat. Once the oil is hot, add the seasoned shrimp in a single layer so they cook evenly. Cook the shrimp for 2–3 minutes per side, turning them once. They’re ready when they turn opaque and curl into a clear “C” shape. Avoid cooking past this point so they don’t become rubbery. Remove the shrimp from the skillet and set them aside on a plate.

Step 3: Start browning the meats

Using a large skillet, heat the remaining 1 tablespoon of vegetable oil over medium to medium-high heat. Add the hamburger meat and the ground beef sausage. Break the meats up as they cook so you get an even crumble. Let them cook until they begin to brown, because browning is what creates the deep, savory flavor that defines dirty rice.

Step 4: Add vegetables and garlic, then finish browning

Once the meats are starting to brown, add the chopped onions and bell peppers directly into the skillet. Add the minced garlic as well. Stir everything together so the vegetables are coated in the rendered fat and the meat mixture. Continue cooking, stirring often, until the vegetables soften and the meat is fully browned. This step is important because you want the vegetables tender and the meat cooked through before moving on to thickening.

Step 5: Season the mixture

Stir in all the seasonings: oregano, thyme, garlic powder, onion powder, chili powder, pepper, salt, and the pinch of cayenne pepper. Mix well so the spices distribute evenly and coat the meat and vegetables. This is where the dish develops its signature warmth and depth, so take a moment to scrape and stir to pick up any flavorful browned bits from the bottom of the skillet.

Step 6: Thicken with flour and add broth gradually

Sprinkle the flour evenly over the meat-and-vegetable mixture. Stir thoroughly so the flour is absorbed and no dry pockets remain. Then, gradually pour in the broth while stirring continuously. Adding it slowly helps the sauce turn smooth and thick rather than lumpy. Bring the mixture up to a gentle simmer and let it cook for 5–7 minutes, stirring occasionally, until it thickens into a rich, saucy base.

Step 7: Stir in the cooked rice and simmer

Add the 4 cups of cooked rice to the skillet. Stir carefully but thoroughly, folding and mixing until the rice is evenly coated with the thickened, seasoned mixture. Once combined, let it simmer for another 5 minutes so the rice can absorb flavor and the texture becomes cohesive, with the sauce clinging to every grain.

Step 8: Return shrimp and heat through

Add the cooked shrimp back into the skillet. Gently mix them into the rice and meat so they’re evenly distributed without breaking them up. Cook just until everything is heated through, keeping the shrimp in the pan only as long as needed so they stay tender.

Step 9: Serve

Once hot and well mixed, remove from the heat and serve right away.
