A classic Chinese-inspired stir-fry, this Pepper Steak dish is bursting with bold, savory flavors, tender strips of beef, and crisp, vibrant vegetables. The combination of marinated steak, sweet bell peppers, and fragrant aromatics creates a comforting, restaurant-quality meal that comes together quickly in your own kitchen. Perfect over rice or noodles, this stir-fry is fast, flavorful, and always satisfying.


Ingredients

For the Steak:

  • 1 lb flank steak or sirloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil

For the Stir-Fry:

  • 2 large bell peppers (any color), thinly sliced
  • 1 large onion, cut into wedges
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2–3 tbsp vegetable oil, divided

For the Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup beef broth (or water)
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp cornstarch
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

For Garnish:

  • Sliced green onions
  • Sesame seeds

Instructions

1️⃣ Marinate the Steak

Place the thinly sliced flank steak in a bowl and add the soy sauce and cornstarch. Mix until every strip of beef is evenly coated.
This quick marinade helps tenderize the meat and creates a protective layer that locks in moisture during high-heat cooking. Let the beef sit for at least 15 minutes while you prepare the vegetables and sauce.


2️⃣ Mix the Sauce

In a separate small bowl, whisk together soy sauce, beef broth, oyster sauce, hoisin sauce, rice vinegar, sugar, cornstarch, black pepper, and the optional red pepper flakes.
This sauce forms the savory backbone of the dish—sweet, tangy, and rich with umami. Set aside.


3️⃣ Sear the Steak

Heat 1 tablespoon of oil in a large skillet or wok over high heat.
When the oil is shimmering hot, spread the steak slices in a single layer. Sear for 1–2 minutes per side, flipping once.
The goal is to get a nice browned exterior without overcooking the meat. Once done, transfer the beef to a plate and set aside.

4️⃣ Stir-Fry the Vegetables

In the same skillet, add another splash of oil if needed.
Stir-fry the sliced bell peppers and onions for 3–4 minutes, letting them soften while still retaining a crisp texture.
Add the minced garlic and ginger, stirring for 1–2 minutes until fragrant. The kitchen should smell incredible at this point!


5️⃣ Combine and Cook

Return the seared steak to the skillet.
Pour the prepared sauce over everything and toss well to coat.
Simmer for 2–3 minutes, allowing the sauce to thicken and cling to the meat and vegetables, creating a glossy, flavorful finish.


6️⃣ Serve and Garnish

Remove from heat and sprinkle with sliced green onions and sesame seeds.
Serve immediately over steamed rice, noodles, or enjoy on its own as a hearty stir-fry.
