Instructions

1️⃣ Prepare the Steak

Place the thinly sliced steak in a small bowl and coat it with cornstarch and soy sauce.
Mix well to ensure that each slice absorbs the seasoning.
Let the steak marinate for at least 20 minutes—this softens the meat and helps it sear beautifully later on.

2️⃣ Prepare the Sauce

In another bowl, whisk together:

  • chicken broth
  • soy sauce
  • brown sugar
  • oyster sauce
  • ginger
  • cornstarch

Stir until smooth and glossy.
Set the sauce aside—this will give the stir-fry its rich, savory finish.

3️⃣ Sear the Steak

Heat a large skillet or wok over medium-high heat and drizzle in the oil.
When the pan is hot, lay the steak slices in a single layer.
Cook about 1 minute per side, just until browned and lightly caramelized.
Remove the steak immediately to avoid overcooking; it will finish cooking later in the sauce.

4️⃣ Stir-Fry the Vegetables

In the same hot skillet, add a little more oil if needed.
Toss in the vegetables and stir-fry for 4–5 minutes, letting them soften while still keeping a slight crunch.
The mix of carrots, kale, sprouts, peppers, and onions gives color, nutrients, and a variety of textures.

5️⃣ Cook the Shrimp

Add the shrimp directly into the vegetables.
Stir-fry for 2–3 minutes until they plump up and curl into a C shape, turning opaque with a soft pink color.

6️⃣ Bring Everything Together

Add the prepared sauce, the seared steak, and the cooked rice noodles to the skillet.
Toss thoroughly so the sauce coats every strand and ingredient.
Let it simmer a few minutes until the sauce thickens and clings beautifully to the noodles.

7️⃣ Finish & Serve

Fold in the green onions and a spoonful of chili crisp if you love heat.
Serve immediately while steaming hot.
