Räuberbraten is a juicy, aromatic roast full of flavor, known for its impressive presentation and simple preparation. The meat, sliced thickly but still connected at the base, allows the seasonings to penetrate deeply, resulting in a tender interior with a slightly crispy exterior. This recipe is perfect for gatherings and celebrations, as it stays warm for a long time and its flavor even improves as it rests.

Ingredients

  • Garlic, to taste
  • 1 ½ kg pork (neck)
  • 3–4 tablespoons mustard
  • 3–4 tablespoons tomato sauce
  • Salt, pepper, and nutmeg, to taste
  • Onion, sliced
  • Paprika powder
  • 1 cup water

Instructions

  1. Prepare the meat properly.
    Place the pork on a sturdy cutting board. Using a sharp knife, make deep cuts from the top of the meat about 2–3 cm apart. Be careful not to cut all the way through; the slices should remain connected at the base so the roast keeps its shape while cooking. This method allows the seasonings and flavors to distribute evenly between each slice.
  2. Make the seasoning mixture.
    In a medium bowl, combine the mustard and tomato sauce until smooth. Add salt, pepper, paprika, and a generous pinch of nutmeg to taste. Mix thoroughly until you have a thick, aromatic paste. This mixture will form the core flavor of the roast, providing slightly spicy, sweet, and seasoned notes.
  3. Fill and season the meat.
    Using a spoon or small spatula, spread the seasoning mixture between each slice of meat, ensuring both sides of each cut are covered. Don’t be sparing—this is where most of the flavor is concentrated.

Next, place 1–2 onion slices into each space. If you want a stronger aroma, add garlic to taste in each opening. Once all the slices are filled, spread any remaining seasoning mixture over the top and sides of the roast.

  1. Prepare for roasting.
    Place the roast in a special oven bag or a lidded roasting pan. Pour 1 cup of water into the bag or pan, keeping the liquid at the bottom. The water will generate steam during cooking, keeping the meat moist and preventing it from drying out.

Preheat the oven to 220°C (428°F). Once it reaches temperature, place the roast in the center of the oven. Cook for approximately 2 hours. During this time, the heat will slowly penetrate the meat, tenderizing it and allowing the flavors to meld deeply.

    After 2 hours, carefully remove the lid or open the oven bag, taking care of the hot steam. Return the roast to the oven and cook for an additional 20 minutes. This final step is essential to achieve a golden, slightly crispy surface that contrasts with the juicy interior.
  2. Rest and serve.
    Once cooking is complete, remove the roast from the oven and let it rest for a few minutes. This allows the juices to redistribute within the meat, ensuring more tender and flavorful slices.
