
This slow-cooker meatloaf takes everything people love about classic comfort food and builds it on a rich layer of sweet, deeply caramelized onions. The onions slowly soften and turn golden over many hours, creating a savory “bed” that keeps the meatloaf moist while flavoring every slice from underneath. Once the meatloaf finishes cooking, a final topping of Swiss (or Gruyère or provolone) melts into a bubbly layer that makes the whole dish feel like a French onion soup–inspired dinner, but in hearty meatloaf form. It’s a great option when you want something hands-off: most of the time is slow cooker time, not active work.

- 3–4 large sweet onions, sliced
- 4 tablespoons salted butter
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1 teaspoon coarse black pepper
- 1 teaspoon granulated sugar
- 1 pound ground beef
- 1 cup Italian herb bread crumbs
- 1 cup milk
- 1 egg
- 1 oz. package French onion soup mix
- 1/2 cup cooking sherry (use an alcohol-free cooking sherry if available)
- 1/2 teaspoon Worcestershire sauce
- 4 oz. Swiss, Gruyère, or provolone cheese

Instructions
- Set up the onion base (this is where the flavor starts).
Use a 6-quart slow cooker so there’s enough room for both the onions and the loaf to sit comfortably. Add the sliced sweet onions directly into the bottom of the slow cooker and spread them out into an even layer. Sprinkle the onions with the sea salt, coarse black pepper, and granulated sugar, distributing the seasonings across the surface so every section of onions gets seasoned. Dot the onions with the salted butter (small pieces spaced out across the top), then drizzle the olive oil over everything. This combination helps the onions soften evenly and develop a richer caramelized flavor over time. - Caramelize the onions low and slow.
Cover the slow cooker with the lid and cook the onions on LOW for 9 hours, until they are well caramelized. Avoid lifting the lid too often—keeping the heat trapped inside helps the onions cook steadily and develop their deep color and sweetness. - Mix the meatloaf mixture.
When the onions are caramelized, prepare the meatloaf. In a mixing bowl, combine the ground beef, Italian herb bread crumbs, milk, egg, and the package of French onion soup mix. Mix until everything is well combined and evenly distributed. The goal is a uniform mixture that holds together well. Once mixed, shape it into a loaf that will fit neatly in your slow cooker. Once the meatloaf reaches temperature, top it with slices of your chosen cheese (Swiss, Gruyère, or provolone). Keep the slow cooker on HIGH and cook for an additional 20–30 minutes, just until the cheese is fully melted and bubbly.
